Tiny Turtle Cupcakes
Teresa Podracky of Solon, Ohio shared this recipe with us. She gives these little chocolate bites to her kids' soccer coaches for an end-of-the-season gift. Be sure to keep some for yourself, too!
21-1/2 oz. pkg. brownie mix
1/2 c. pecans, chopped
16-oz. container dark chocolate fudge frosting
1/2 c. pecans, toasted and coarsely chopped
Prepare brownie batter according to package directions. Stir in chopped pecans. Fill paper-lined mini muffin cups 2/3 full. Bake at 350 degrees for 18 minutes, or until a toothpick tests clean. Cool cupcakes in tins on wire racks 5 minutes. Remove from tins; cool completely. Frost cupcakes; top with toasted pecans. Spoon Caramel Sauce evenly over cupcakes. Store in refrigerator. Makes 4-1/2 dozen.
Caramel Sauce:
12 caramels, unwrapped
1 to 2 T. whipping cream
Combine caramels and one tablespoon cream in a small saucepan; cook and stir over low heat until smooth. Add remaining cream as needed for desired consistency.

Raspberry-Almond Shortbread Cookies
Dee Ann Ice of Delaware, Ohio shared this recipe...these buttery-delicious cookies look beautiful on
a dessert tray!
2/3 c. sugar
1 c. butter, softened
2 t. almond extract, divided
2 c. all-purpose flour
1/2 c. seedless raspberry jam
1 c. powdered sugar
2 to 3 t. water
Using an electric mixer on medium speed, combine sugar, butter and 1/2 teaspoon almond extract until creamy. Reduce speed to low and add flour. Continue beating until well mixed. Shape dough into
one-inch balls. Place 2 inches apart on ungreased baking sheets. Gently press a thumbprint in center of
each cookie. Fill each with about 1/4 teaspoon jam. Bake at 350 degrees for 14 to 18 minutes, until edges are lightly golden. Let cool one minute on baking sheets. Remove cookies to wire racks to cool completely. Combine remaining extract, powdered sugar and water; drizzle lightly over cookies. Makes 3-1/2 dozen.
