Cheesy Ham & Vegetable Bake
Jackie Flood from Geneseo, New York, shared this recipe with us. She writes, "This is a good way to use up leftover ham after the holidays. To lighten up this recipe, you can use low-fat dairy products with delicious results."
1-1/2 c. rotini pasta, uncooked
16-oz. pkg. frozen broccoli, carrots and cauliflower blend
1/2 c. sour cream
1/2 c. milk
1-1/2 c. shredded Cheddar cheese, divided
1-1/2 c. cooked ham, chopped
1/4 c. onion, chopped
1 clove garlic, minced
1/2 c. croutons, crushed
Cook pasta according to package directions; add frozen vegetables to cooking water just to thaw. Drain; place mixture in a 2-quart casserole dish that has been sprayed with non-stick vegetable spray. Mix sour cream, milk, one cup cheese, ham, onion and garlic; stir into pasta mixture in dish. Bake, uncovered, at 350 degrees for 30 minutes. Sprinkle with croutons and remaining cheese during last 5 minutes of baking. Serves 6.

White Chicken Chili
Andrea Pocreva from San Antonio, Texas, shared this crowd-pleasing recipe...it's easily halved for smaller gatherings!
2 onions, chopped
1 T. olive oil
6 c. chicken broth
6 15-1/2 oz. cans Great Northern beans, drained and rinsed
3 5-oz. cans chicken, drained
2 4-oz. cans diced green chiles
2 t. ground cumin
1 t. garlic powder
1-1/2 t. dried oregano
1/4 t. white pepper
12-oz. container sour cream
3 c. shredded Monterey Jack cheese
In a large stockpot over medium heat, sauté onions in oil until tender. Stir in remaining ingredients except sour cream and cheese. Simmer for 30 minutes, stirring frequently, until heated through. Shortly before serving, add sour cream and cheese. Stir until cheese is melted. Serves 16 to 20.

Triple Chocolate Cake
This recipe was shared by Joan Brochu of Harwich, Massachusetts. She
writes, "This ooey-gooey dessert is a chocolate lover's delight!"
18-1/2 oz. pkg. chocolate cake mix
8-oz. container sour cream
3.9-oz. pkg. instant chocolate pudding mix
12-oz. pkg. semi-sweet chocolate chips
4 eggs, beaten
3/4 c. oil
1 c. water
Garnish: vanilla ice cream
Place all ingredients except ice cream in a slow cooker; mix well. Cover and cook on high setting for 3 to 4 hours. Serve warm, garnished with scoops of ice cream. Makes 8 to 10 servings.
