October is here and, here in Ohio, that means days alternating between Indian Summer and that oh-so-welcome cool, crisp air. It's the time of year when trips to the pumpkin patch are a must and warm apple cider tastes just right. The leaves have fallen and are swirling in the Autumn wind and,

before long, little ghosts and goblins will be knocking at the door looking for treats. Can you tell that October is one of our favorite times of the year?

Decorate your mantel in autumn's best...cinnamon-scented candles, gourds, bittersweet vines, Chinese lanterns, colorful leaves and mini pumpkins.

Fill a simple terra-cotta flowerpot with dried wheat for a quick & easy harvest centerpiece that's also a thoughtful favor for guests. When dinner's over, send friends home with one of their own.
Give scoops of snack mix inside a witch's broom...what a clever party favor! Fill sandwich-size plastic zipping bags with snack mix, then tuck a bag inside a crumpled brown paper lunch sack. Slip a pretzel rod inside, gathering the bag around it. Tie the bag closed with a string of black licorice.

A simple harvest touch...bundle silverware into a homespun napkin and tuck in a colorful autumn leaf.
Decorate a plain white pumpkin in no time at all. A stencil and a bit of black paint is all it takes. Show off your pumpkin by setting it on a footed cake stand. |
Serve up mummy dogs in a jiffy. Simply wrap a strip of breadstick dough around individual hot dogs. Arrange them on an ungreased baking sheet and bake at 375 degrees for 12 to 15 minutes.

Haunted House
pint-size paper milk carton
cardboard square
vanilla frosting
graham crackers
candy-coated chocolate pieces
candy corn
black licorice
mini chocolate bars
candy pumpkins
ghost-shaped marshmallows
Clean out the milk carton with soapy water, rinse and let dry. Attach the milk carton to the cardboard square with a dollop of frosting; hold in place for 30 seconds. Use frosting to attach graham crackers to carton, breaking the crackers as needed to fit. To form the roof, turn 2 graham cracker rectangles on their sides and lean toward each other; secure to the carton with frosting. Cut a cracker square diagonally and attach each piece to the front and back of the roof. Use frosting to attach the remaining candy. Use candy-coated chocolate pieces as shingles and mini chocolate bars as doors and windows. Use black licorice to fill in the seams of the house and attach pumpkins and ghost-shaped marshmallows.

Sweet & Spicy Pumpkin Seeds
You'll find this recipe and many more in our 2011 Appointment Calendar!
1 c. pumpkin seeds
5 T. sugar, divided
1/4 t. salt
1/4 t. ground cumin
1/4 t. cinnamon
1/4 t. ground ginger
1/8 t. cayenne pepper
1-1/2 T. peanut oil
Lay pumpkin seeds on a baking sheet lined with wax paper; bake at 250 degrees for one hour, or until dry. Cool. In a bowl, combine 3 tablespoons sugar, salt, cumin, cinnamon, ginger and pepper; set aside. Heat oil in a skillet; add pumpkin seeds and remaining sugar. Cook for 45 to 60 seconds, or until sugar melts and pumpkin seeds begin to caramelize. Transfer to a bowl; stir to coat. Cool. Makes about one cup.

3 to 4 lbs. chicken
1 c. all-purpose flour
salt and pepper to taste
1/2 c. margarine
2.1-oz. pkg. chicken noodle soup mix
| 10-3/4 oz. can cream of mushroom soup
12-oz. can evaporated milk
1 t. poultry seasoning
dried parsley to taste

Coat chicken pieces in flour; sprinkle with salt and pepper. Melt margarine in a large skillet over medium heat. Fry chicken until golden on both sides; transfer to a greased 13"x9" baking pan. Sprinkle with dry soup mix; pour mushroom soup over top. Combine evaporated milk, seasoning and parsley in a small saucepan over medium heat; heat through without boiling. Pour over chicken. Bake, uncovered, at 350 degrees for 30 minutes. Serves 4.
