While the heat of the season winds down, we're treated to some of the most beautiful blue-skied, Indian Summer days. We love the combination of crunchy leaves and cool air mixed with the warm summer sun at our backs. September must be one of the best months of the year, don't you think?

It's no secret that fall is one of our favorite times of the year, but these days get filled up quick. With back-to-school busyness, trips to the apple orchard, preserving the last of our gardens' bounty and just getting outside to enjoy the perfection of September, the next few weeks are sure to fly by.
Not only are we sharing a quick dinnertime solution for the on-the-go evenings coming up, we're also so very excited to tell you about our brand new series. Our new collection is just right for curling up with on your front porch swing or your favorite easy chair. We hope you love them as much as we have loved creating them just for you.

Busy back-to-school season is here and evenings for some families are bound to get hectic. That's where short-cut recipes, like this one from 101 Easy Everyday Recipes, comes in handy. Toss it together in a skillet without sacrificing a bit of flavor...we know you're gonna love it!

Easy Skillet Lasagna
This recipe was shared with us by Terri McClure...she's from right around the corner, in Hilliard, Ohio! She writes, "My husband often asks me to make this recipe. And sometimes, he even helps prepare it! Tastes great with ground turkey too."
1-1/2 T. olive oil
1/2 green pepper, finely chopped
1 onion, finely chopped
1 clove garlic, minced
16-oz. jar spaghetti sauce
1 lb. ground beef, browned and drained
6 lasagna noodles, cooked and cut in half
12-oz. container small-curd cottage cheese
4 slices mozzarella cheese
1/2 c. grated Parmesan cheese
Heat oil in a skillet over medium heat. Sauté green pepper, onion and garlic until tender; drain. Transfer to a bowl; stir in spaghetti sauce and browned beef. In skillet, layer 1/3 of sauce mixture, half the lasagna noodles, half the cottage cheese, 2 slices of mozzarella and half the Parmesan. Repeat layers. Top with remaining sauce, making sure to cover all noodles. Cover and simmer over medium-low heat for 10 to 15 minutes. Remove from heat and let stand for 10 minutes before uncovering and serving. Serves 4.
