1 c. quick-cooking oats, uncooked
1/2 c. milk
3/4 c. brown sugar, packed
1/4 c. butter, melted and slightly cooled
1 egg, beaten
1 c. all-purpose flour
1/2 c. chopped walnuts
2 t. baking powder
Mix oats, milk and brown sugar in a large bowl; let stand for
5 minutes. Add butter and egg; blend well. Stir in remaining ingredients just until moistened. Fill greased muffin cups 2/3 full. Bake at 400 degrees for 15 to 20 minutes, until a toothpick inserted in the center comes out clean. Makes one dozen.
